Baked Rasogulla and Baked Cham Cham at Mudia Nii Mithaio - Nanpura, Surat

The city of Surat has been one with the richest culinary amalgamation and has enthralled and encapsulated the imaginations of not one but many cultures and traditions.. Be it the Portuguese and Dutch influence on the foods and culinary techniques to the Nawabi and Awadhi influence over the meat preparation and eating patterns in the city. One such amazing influence that less people know about is the connection of Surat with Kolkata. . . Both the cities of Surat and Kolkata have been predominantly trading hubs and a lot of Marwari traders have made both the cities their home and showered it with patronage and made it prosperous for a couple of centuries now. History has seen how time and travel promote cross breeding of cuisines, so the tastes and preferences of people had a considerable influence over each other. One such culinary exchange led to a lot of migrant Bengalis and Odiyas to come to the port city of Surat looking for the opportunity to market their skills to one of the most prosperous city centers of the country at that time.

Traditional Bengali sweets are everyone's favourite right from the simple Mishti Doi (Sweet Yogurt) to Chhena Rasogulla and from the Basic Shondesh to the complex Cham Cham (Chum Chum or Chom Chom)

Bengalis have mastered the art only found otherwise in the French culinary sciences of playing with dairy in all its forms. And when it comes to Indian Desserts, Bengali masterpieces leave a big impact on the timeline.

Our city of Surat also has one brilliant corner for awesome Bengali Mithaai and Sweets Mudita Nii Mithaaio (https://www.facebook.com/muditanimithaio) (@muditanimithaio) is that place where I tried my first Rasogulla at the hands of Prakash Uncle (Late Shri Prakashbhai Bhatt - who founded this place in 1985 and named it after his lovely first born daugther Mudita) and years later today the next generation is taking these traditional dishes and bringing a little modern take to the lovely culinary heritage by bringing Baked Rasogulla and Baked Cham Cham.
